  • Draining the excess of water while cooking of rice depletes it of valuable vitamins and hence such practices should be avoided. Switch from refined to less refined grains.
  • Beware of artificial coloring of dals to enhance their color and market value. Artificial colors are carcinogenic. Use of prohibited pesticides should be banned.
  • Cooked dals, roti, rice etc have a shelf life of only a few hours and should be discarded after that period.
  • Don't over cook the dals. Cooking on slow heat contains the nutrition as compared to high heat and high pressure.
  • Wash dals/cereals- wash them 2-3 times before cooking/soaking and grinding.
